What is Clarified Butter?
Clarified butter is milk fat rendered from butter to separate the milk solids and water from the butterfat. Typically, it is produced by melting butter and allowing the components to separate by density.
Why clarified butter is preferred:
There are three main reasons to clarify the butter before you begin.

2. Clarified butter has a higher smoke point. If you are using the butter in recipes that require temperatures higher than 325 degrees, you want to clarify your butter.

How to Clarify Butter:
Turn the stove onto low. Place the butter in a saucepan or metal bowl and let the butter completely melt leave on low heat for 35-40 mins.
The butter will become clear with a small amount of milk solid remaining on the bottom.
Skim any film off the top. Very gently pour the clarified butter into another container.
The butter is now ready to be infused.
