Twisted Lollipops
VERY IMPORTANT: Your candy thermometer is the most important tool you use when it comes to candy making. A difference of even 1 or 2 degrees can be the difference between an OK product and the perfect one. It's important to calibrate your candy thermometer each time before using. What do we mean by a properly calibrated candy thermometer? There are two things that can have an effect on a candy thermometer:
Makes approx 6-8 lollipops depending on mold size Tools Required: Candy thermometer Medium saucepan (heavy bottom preferred) Silicon lollipop mold and lollipop sticks Spatula Oven glove or mitt Pastry brush and cup of boiling water Ingredients Hard Candy with Cannabutter 1 cup sugar 1/2 cup corn syrup 1/4 cup water 1-2 tablespoons cannabutter, depending on strength you want. (regular pops, eliminate). Do no add more than 2 tbls. If you do it will destroy your syrup. If you want to add more butter, double the recipe 1-2 drops of candy flavouring 1-2 drops of food colouring (optional) 1/4 teaspoon sunflower or soy lecithin - (regular pops, eliminate) 1/8 teaspoon guar gum - (regular pops, eliminate) optional If you don't have guar gum, increase the lecithin to 1/2 teaspoon. Ingredients with Canna Sugar/Syrup: 1/2 cup canna sugar 1/2 cup sugar 1/4 cup canna syrup 1/4 cup light corn syrup 1/2 cup water Directions: Combine sugar, corn syrup, and water in the saucepan, place on Med-Low heat. Stir gently and continuously until the candy syrup just begins to bubble. As soon as the syrup begins to bubble, stop stirring and attach the candy thermometer to side of the pot. To avoid crystals from forming in your candy, DO NOT STIR AGAIN UNTIL TEMPERATURE IS REACHED. Wash down the sides of the pot with a pastry brush and hot water The syrup will take approx 15 mins to get to desired temperature of 300 F hard crack. Note: The syrup will get up to approx 220-223 F and stay at this temperature for approx 10-15 mins while the water boils off. Do not increase the stove temperature. After approx 10-15 mins, or once the water begins to boil off, the temperature will begin to rise. At this point the temperature will rise pretty quick and it's very important not to leave the kitchen or get distracted. Keep a close eye on the thermometer. As soon as the syrup reaches desired temperature 300 F, remove from the heat and wait until the syrup stops bubbling before adding the cannabis butter, lecithin, guar gum, flavor and colouring. Mix until syrup is one solid colour and the cannabis butter if fully incorporated. I takes about 2-3 mins of stirring for the everything to come together. When you first add the butter and other ingredients it takes awhile for the butter to begin to come together with the syrup, Be careful stirring as the butter or oil can splash up. Continue stirring until an even colour. As the syrup and butter come together, the syrup will begin to lighten in colour and change for translucent to opaque. As soon as the syrup is one solid colour, carefully pour the syrup into the mold. If the syrup becomes to stiff to pour, place on low heat to melt. I highly recommend using the Wilton Easy Pour Funnel, it makes pouring syrup into molds a breeze, especially if you want 2 flavours and colours. If you have a two piece mold, allow the syrup to set for 1-2 mins before putting the mold together then add the lollipop sticks. Allow to cool on the counter for 1-2 hours. Remove lollipops from the mold, wrap in wax or cello paper. Store in an air tight container and keep in a dry, cool place.
