Sour Gummy Candy Recipe - Intermediate to advanced candy makers
in a quest to find out how to make sour patch kids and other sour candies, I came across this recipe. It was nothing like a sour gummy candy but it was spot on for gummy bear type candies. This is a professional cannabutter gummy candy recipe for intermediate to advanced candy makers.
For beginners please see my other Gummy Bear recipe.
Ingredients:
Gelatin
3 Tbls. or 3 envelopes Unflavored Gelatin
1 box of flavored Jello (strawberry, cherry, orange, lemon, etc.)
3/4 cup of fruit juice (split 1/4 and 1/2)
1/2 tsp. Citric Acid
2 Tbls. light corn syrup
Candy Syrup
1 cup Sugar
1/2 cup light corn syrup
1/2 cup water
2-4 Tbls. Cannabutter (depending on strength)
1/4 tsp. Guar Gum (add additional 1/8 tsp if needed)
Food coloring and flavoring (optional)
Sugar Sour Mix
1 cup sugar
1/2 tsp citric acid.
In a bowl mix sugar and citric together. Once candies are removed from the molds add to sugar/sour mix. Cover thoroughly and leave out for 12-24 hours to dry. If you have a dehydrator, place a wire rack on the top of with parchment paper. Set the dehydrator to the lowest setting and set the candies on top to dry.
